Whole wheat bread or wholemeal bread or Atta Bread is a type of bread made using flour that is partly or entirely milled from whole wheat grains. It has more iron, calcium, protein, and other nutrients than white flour or maida.
———————————————————————
Ingredients:
1 cup warm milk
2 tbsp sugar
1 tbsp dry active yeast
2 to 3 tbsp milk powder (optional)
3 cup wheat flour or atta
1 tsp salt
2 tbsp oil or ghee or butter
100ml water (as required)
Instructions:
Setp 1: Take 1 cup warm milk in a large mixing bowl, add 2 tbsp sugar and 1 tbsp dry yeast & mix well. Rest for 10 – 12 mins, allow the yeast to activate.
Step 2: Add milk powder (optional) & mix well. Next add 3 cup wheat flour, 1 tsp salt and 2 tbsp oil. Mix until everything combined well. Add water if necessary and knead well (for about 15 min).
Step 3: Cover the bowl with cling wrap or moist cloth or by any other means and rest for 1.5 – 2 hours. When the dough will double in size, knock down the air inside & knead again to a cylindrical shape.
Step 4: Place the dough in a greased loaf pan (9 X 5 inch), cover and rest for 30 minutes or till dough rise just an inch above the loaf pan.
Step 5: Preheat the oven to 170 C with power on both rods (with convection fan) for 10 mins. Brush the buns lightly with milk on top and place the tray in the lower or central rack of the oven. Bake for 30 to 40 minutes at the same temperature & settings or until the top of the bread turns slightly brown.
Step 6: Serve whole wheat bread or atta bread with jam or make your favourite sandwich & enjoy!
NOTE: 35°– 45°C is an ideal temperature for Active Dry Yeast
