You need to try this baking sheet salmon dish! 😍
Ingredients for 2 servings:
9oz (250g) salmon
3-4 medium potatoes
1/2 small Hokkaido pumpkin
2 tbsps olive oil
3.5oz (100g) feta cheese
2 tbsps (25g) pine nuts
Salt and seasoning of choice (I used Susie Q’s Santa Maria seasoning)
Boil potatoes until they are done. Leave them to cool and smash them with a flat surface, such as the bottom of a glass.
Brush them with olive oil and sprinkle with salt. Set aside.
Cut the pumpkin into slices and marinate in olive oil. Season with salt. Spread onto a baking tray.
Add salmon to the smashed potato baking tray and season the salmon.
Bake everything at 400°F / 200°C in the oven for 30 minutes (but remove the pumpkin after 20 minutes to top with feta and pine nuts and put back into the oven for another 10 minutes) or until golden brown.
Arrange everything on a plate and add some greek yogurt dip to it if you like. I mixed plain greek yogurt with salt, parsley and garlic.
