In this video, I’ll show you how to make a flavorful and healthy Buffalo Bean Salad! 🥗🌶️ This easy salad recipe combines the bold flavors of buffalo sauce with protein-packed beans and fresh veggies, making it perfect for a quick lunch, dinner, or even as a side dish for your next gathering.

Recipe:

1 Bell Pepper
1 Red Onion
1 Bunch of Cilantro
2 Avocados
1 package of fresh mozzarella
1 can of Chickpeas
1 can of White Beans
1 can of Corn

Dressing

½ cup Olive Oil
½ cup Buffalo Hot Sauce
2-3 tbs Ranch Seasoning Mix
½ tsp each Salt and Pepper

Grill Chicken Breast with seasonings of your choice. Once they are cooked through, set aside to let them cool.
Chop bell pepper, red onion, cilantro, avocados, and fresh mozzarella and add to a large bowl.
Drain and rinse chickpeas, white beans, and corn. Make sure you rinse them thoroughly. Allow them to drain well before adding to the bowl. See tips and tricks for more information.
Once the beans and corn are rinsed and drained, add to the bowl with the other vegetables.
Once the chicken is cooled, chop it up and add to the vegetable mixture.
Mix olive oil, buffalo hot sauce, ranch seasoning mix, salt and pepper, and the zest and juice of a lime in a small bowl.
Add dressing to the vegetable mixture and mix thoroughly.
Cover and put in the fridge for 2 hours to marinate before eating!
