Nutty Date & Apricot Energy Bars
Time to switch from munching on unhealthy snacks to something nutritious and delicious! These homemade energy bars are packed with vitamins, fatty acids, and essential nutrients that your body needs. The best part? They’re super easy to make and can be stored in the fridge or an airtight container for up to 10 days. Ingredients:
½ cup almonds
½ cup cashews
1/2 cup pumpkin seeds
2 tbsp chia seeds
2 tbsp flax seeds
1 cup pitted dates
¼ cup dried apricots, roughly chopped
¼ cup additional almonds, roughly chopped
2 tbsp additional pumpkin seeds, roughly chopped
Dark chocolate for drizzling
Instructions:
First, roast the almonds, cashews, pumpkin seeds, chia seeds, and flax seeds in a pan over medium heat for about 4-5 minutes, stirring continuously to prevent burning. Once they turn golden and aromatic, remove from the heat and let them cool completely.
Transfer the cooled nuts and seeds to a mixer or food processor and pulse them into a fine powder. Add the pitted dates to the mixture and blend again until it becomes sticky and starts to clump together.
Roughly chop the dried apricots, almonds, and additional pumpkin seeds, then mix them with the sticky nut and date mixture. Make sure everything is evenly combined.
Line a tray with parchment paper, then press the mixture firmly into the tray, spreading it out to create an even layer. Let the mixture rest for about an hour to firm up, or refrigerate to speed up the process.
Once set, cut into bars or squares, then melt some dark chocolate and drizzle it over the bars. Allow the chocolate to set before serving. Enjoy these delicious energy bars as a wholesome snack or post-workout treat.
