Healthy dinner ideas should always be easy dinner recipes. 30 minute meals are the best after a long busy day, this easy chicken stir fry recipe is tastier than take out, saves money and your waist line. Choose the right soy sauce to make it naturally gluten free. The leftovers make a delicious meal prep.

Stir Fry Ingredients
-1 lb Boneless chicken breast cut into chunks
-2 C Broccoli florets, chopped into bite sized pieces
-1 C Sliced carrots
-1 Yellow pepper, chopped into bite sized pieces
-2 t Sesame oil, divided
-1C Jasmine rice, dry

Sauce Ingredients
-1 1/4 C Low sodium chicken stock (use gluten free as needed)
-1 t Sesame oil
-1/4 C Low sodium soy sauce (use gluten free as needed)
-1 t Minced garlic
-1 t Ginger paste
-3 T Cornstarch- for slurry
-1/4 C Cold water- for slurry

Directions
-Cook Jasmine rice according to package directions
-Heat wok or large sauté pan over medium high heat
-Add 1 tsp sesame oil
-Add chicken chunks and stir fry until cooked through, ~5-6 minutes, stir often
-Remove chicken from pan & add 1 tsp sesame oil
-Add chopped veg, stir fry until cooked through, ~5 minutes, stir often
-Remove veg from pan and add 1 tsp sesame oil, garlic, ginger paste, soy sauce and chicken stock. Heat to boil and then reduce heat to simmer
-Make slurry: Using a small bowl mix corn starch and cold water, whisk together until the corn starch is completely dissolved.
-Add slurry to pan with sauce, whisk well. Allow to simmer for 3 minutes
-Add chicken and veggies back to pan, toss in sauce
-Serve over rice

Makes 4 servings
