Avocado Veggie Toast Recipe
Ingredients:
• 1 ripe avocado (mashed)
• 1 cucumber (sliced or diced)
• 1 onion (finely chopped)
• 6-8 cherry tomatoes (halved)
• 1-2 green chillies (finely chopped)
• 2-3 spring onions (chopped)
• Spices (as per taste)
• Lemon juice (to taste)
• Bread slices
• Lettuce leaves
• Mayonnaise or mint chutney
Instructions:
1. Mash the Avocado
Start by cutting the avocado in half, removing the pit, and scooping out the flesh into a bowl. Mash it well until it becomes smooth and creamy.
2. Prepare the Veggies
Chop cucumber, onion, cherry tomatoes, green chillies, and spring onions.
3. Mix Everything Together
Add all the chopped veggies into the mashed avocado. Sprinkle your favorite spices like salt, pepper, cumin, or chaat masala, chilli flakes and squeeze some lemon juice on top. Mix well.
4. Prepare the Bread
Take your bread slices. Add a layer of lettuce on one slice, spread some mayonnaise or mint chutney as per your preference.
5. Add the Avocado Mixture
Spread the avocado mixture on the bread, close it with another slice, and your avocado veggie Toast is ready to serve.
