Ingredients:
Oatmeal Pancakes:
1 cup old-fashioned rolled oats
1 cup almond milk
2 tbs maple syrup
1 tsp vanilla extract
1/2 cup + 3 tbs wholewheat flour
1 tbs baking powder
1/4 tsp salt
1/2 tsp cinnamon
Crispy Mushroom Pita:
8 oz Trumpet mushrooms
8 oz baby bella Mushrooms, sliced
Pita bread
Diced tomatoes
Chopped Romaine lettuce
Diced red onion
Garlic powder
Onion powder
Smoked paprika
Oregano
Salt
Black pepper
Avocado oil
Marinade:
6 tbs coco aminos
3 tbs avocado oil
2 tbs apple cider vinegar
2 tbs maple syrup
1 tsp liquid smoke
1 tbs steak seasoning
1 tsp smoked paprika
1 tsp Black pepper
Wet batter:
1 cup whole wheat flour
1 cup spring water
1 tsp salt
1/2 tsp Black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp Oregano
1/2 tsp Cayenne pepper
Dry batter:
1 cup whole wheat flour
1 tsp salt
1/2 tsp Black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp Oregano
Vegan Chipotle Ranch:
1 1/2 cup vegan mayo
4-6 Chipotle pepper + 1 tbs adobo sauce
1/2 cup plant milk
1/2 lemon juice
2 tsp minced garlic
1/2 tbs chopped parsley
1 tsp dill
1 tsp onion powder
1/4 tsp smoked paprika
Salt & black pepper to taste
Chickpea & Sweet Potato Curry:
1-2 tbs avocado oil
2 cloves garlic, minced
1/2 red onion, diced
1/2 sweet potatoe, peeled amd cubed
1/4 red bell pepper, roughly chopped
1/4 green bell pepper, roughly chopped
8 oz of fired roasted crushed tomatoes
1 cup vegetable broth
1 14 oz can of chickpeas
1/4 cup coconut milk
2 tbs Fresh parsley
1 tbs curry
1/2 tsp all spice
1/2 tsp nutmeg
3/4 tsp smoked paprika
1 tsp thyme
1/2 tsp Cumin
1/2 tsp Cayenne pepper
1/2 tsp Black pepper
*Serve with brown rice.
