These super easy peanut butter cookies are made using chickpeas (of course!) making them high fibre, high protein & so darn delicious!
Ingredients
1 tin chickpeas, drained
6 medjool dates
1/4 cup peanut butter powder
1 tsp vanilla
Splash of plant milk
1 tsp baking powder
Pinch of salt
Optional – vegan choc chips
1. Blitz all the ingredients in a food processor until it forms a nice cookie dough consistency. Feel free to stop right here and enjoy!
2. Or you can divide into 8 cookies on some parchment paper, add choc chips and pop into the oven at 180 for 20mins. Then enjoy!
