Creamy Turkey Shepherd’s Pie
350 calories, 30g protein
Ingredients:
*1 tablespoon olive oil
*2 tablespoons finely diced yellow onion
*1 carrot, peeled and finely diced (about 1/2 cup)
*1 tablespoon finely diced celery (about 1/4 stalk)
*1/4 teaspoon minced garlic
*1 teaspoon flour
*1/2 cup low-sodium chicken broth
*1/3 cup leftover green beans, chopped
*1/2 cup leftover chopped turkey breast
*Salt and pepper to taste
*1/4 teaspoon dried thyme
*3/4 cup Creamy Mashed Cauliflower
Instructions:
-In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat.
-Add the diced onion, carrots, and celery. Cook, stirring, until tender, about 15-20 minutes.
-Add the minced garlic and cook for an additional 1 minute.
-Sprinkle in 1 teaspoon of flour and stir until fully combined.
-Gradually add the low-sodium chicken broth, stirring continuously until the broth thickens.
-Stir in the chopped green beans and turkey breast until warmed through.
Season with salt, pepper, and dried thyme to taste.
Transfer the filling to a personal-sized ramekin.
Top with 3/4 cup of Creamy Mashed Cauliflower and smooth it out.
Bake at 375°F for about 20 minutes, or until the top is heated through.
Allow to cool for a few minutes before serving.
