Ingredients: ( serves 4)
1 cup cooked quinoa
1 cup cooked chickpeas( steamed)
1 cup cooked beetroot (chopped, steamed)
¼ cup green pumpkin seeds
¼ cup chopped coriander leaves
½ cup pomegranate seeds
Dressing:
1 tbsp Dijon mustard
1 tsp crushed pepper
Juice of 1 lemon
½ tsp maple syrup
Salt to taste
Instructions:
Combine all the base ingredients in a large mixing bowl.
In a separate bowl, whisk together Dijon mustard, crushed pepper, lemon juice, maple syrup , and salt until well combined.
Pour the dressing over the salad and toss gently to mix.
Serve immediately or refrigerate for a chilled version.
