Instant Masoor Dal Dosa

Ingredients:
* 1 cup split red lentils (masoor dal)
* 1/2 inch piece of ginger
* 2-3 pods garlic
* Dry Red Chillies – 2-3 nos
* Salt to taste
* 1/2 tsp red chilli powder
* Spring onion greens
* Water, as needed
* Oil or ghee, for cooking

Instructions:
* Wash the dal and soak for 15-20 minutes
* In a blender add the dal, ginger, garlic, and dry red chillies, and grind them into a paste with water
* Pour into a bowl, season with salt and red chilli powder, mix well, add water to adjust the consistency
* Heat a dosa tawa and then pour a ladleful of the dosa batter onto the centre of the skillet
* Spread the batter in a circular motion to form a thin dosa
* Drizzle a few drops of oil/ghee around the edges of the dosa and cook until the dosa turns golden and crispy. Add some spring onion greens on top, flip the dosa and cook for an additional 1-2 minutes.

Serve the Instant Masoor Dosa hot with Sambar or Chutney and ENJOY!!!
