Healthy back to school lunch recipes! Vegan Mediterranean Sandwich recipe with oil-free roasted vegetables and an easy lemon basil sauce. Plus my new favorite vegan snack, Way Better Snacks Rosemary crackers and fresh fruit to help you get through a busy school or work day.

INSTAGRAM:

You will need:

Vegan bread of your choice. Here I used ciabatta rolls
roasted veggies, I used eggplant squash, red onion, and carrots
– soy sauce
– black pepper
– dried rosemary
– dried oregano
-dried garlic powder

Lemon Basil Sauce
– 3 tbsp hummus
– 1 tbsp fresh lemon juice
– splash of water (1 tbsp)
– 3-4 large basil leaves

Blend for 30 seconds in a high powdered blender until very smooth and creamy 🙂
