For the Beef:
2–3 lbs chuck roast, cut into chunks
Salt & pepper
2–3 tbsp cooking oil
6 cloves garlic, minced
4 cups beef broth
2–3 tbsp garlic powder
1 tbsp Mexican oregano (or regular oregano)
1 tsp dried basil
1 tbsp crushed red pepper (optional, for heat)
1 tbsp onion powder
For the Sandwich:
Hoagie or French rolls
Butter (for toasting)
Giardiniera (hot or mild, store-bought or homemade)
Horseradish sauce (optional)
For the Healthy Version:
Large cabbage leaves, cut into rectangles
For the Au Jus (Dipping Sauce):
Leftover beef cooking liquid
Recipe
Prepare the Beef:
Season chuck roast chunks with salt and pepper.
Heat oil in a pressure cooker, then sear the beef on all sides.
Add minced garlic and cook until fragrant.
Add Seasonings & Liquid:
Pour in beef broth, garlic powder, oregano, basil, red pepper flakes, and onion powder. Stir well.
Seal the pressure cooker and cook for 1 hour.
Prepare the Rolls:
Butter the hoagie or French rolls.
Toast them in a hot skillet for 15–20 seconds until lightly charred.
Shred the Beef:
Once cooked, shred the beef with tongs or forks.
Assemble the Sandwich:
Layer shredded beef and giardiniera on the toasted roll.
Optionally, add horseradish sauce for extra flavor.
Healthy Version:
