Asian Cucumber Salad Recipe | How To Make Cucumber Salad

This Asian cucumber salad has a slight tang to it from the rice wine vinegar so if you find that is just a little to tangy for your palate then feel free to adjust the acidity by adding a little more honey, or you could also add a little salt or sugar to help balance out the tangy flavor of this easy Asian cucumber salad recipe. Ingredients:
Hot House Cucumbers
Sesame Seeds
Sesame Oil
Low Sodium Soy Sauce
Honey
Crushed Red Pepper Flakes
Rice Wine Vinegar
Garlic
Ginger Root
Green Onion
Cilantro

Exact Measurements:
2 Large Hot House Cucumbers
1/4 Cup Rice Wine Vinegar
1 Tablespoon Low Sodium Soy Sauce
1 Tablespoon Sesame Oil
1 Tablespoon Honey
1/4 teaspoon Crushed Red Pepper Flakes
Sesame Seeds (amount optional)
2 Green Onions (thinly sliced)
2 Garlic Cloves (finely minced)
1/4 Cup Cilantro (finely chopped)
1 teaspoon Ginger Root (grated)

Instructions:
Clean the cucumbers and pat them dry. Add the sesame seeds to a small saucepan, toast the sesame seeds over a low heat, stirring them intermittently to prevent burning. Once the sesame seeds are a light golden brown color turn the heat off and quickly transfer the sesame seeds into a small bowl. Use a mandolin or a sharp knife to slice the cucumbers into a large bowl. To a small bowl add the sesame oil, soy sauce, rice wine vinegar, honey. Whisk these ingredients together until incorporated. Add the minced garlic, and grated ginger root. Whisk well to combine. Pour the dressing over the cucumbers. Toss well to evenly coat. Cover with saran wrap. Place in the fridge for a minimum of 10 minutes but for maximum flavor between 30-45 minutes. (the longer the cucumbers marinate in the dressing the softer they will become). Take the asian cucumber salad out of the fridge. Remove the saran wrap. Add the cilantro, green onion, crushed red pepper flakes, and sesame seeds. Toss well to incorporate the ingredients. Transfer the asian cucumber salad into a bowl and serve.

***Disclaimer – The longer you marinate the Asian cucumber salad the softer the cucumbers will become.
