I’m taking some baby steps towards healthy eating by making these delicious Carrot Cake Energy balls to snack on when I get a sweet tooth. They give me a little energy pick-me-up without the processed sugar and they only take a few minutes to make!
1 cup pitted dates
1/2 cup rolled oats
1/4 cup pecans
2 medium carrots, peeled and chopped
1 tsp vanilla
3/4 tsp cinnamon
1/2 ground ginger
1/4 tsp turmeric
1/4 tsp salt
Combine all ingredients in the food processor attachment of the Dash Chef Series Hand Blender and blend until combined.
Roll the dough into balls and store in the refrigerator.
