Here is the chicken fried rice recipe:
2 cups jasmine rice, cooked
12oz rotisserie chicken, shredded
2 large eggs
1/2 cup soy sauce
2 bags (10oz each) frozen cauliflower medley, I use Green Giant
1/2 cup frozen corn
spray oil
salt & pepper
1/4 cup green onion, sliced

In a large pan on medium-high heat, spray with spray oil and add the 2 bags of frozen cauliflower medley and corn. Cook until just warmed.
Add two cups of cooked jasmine rice and stir to combine.
Push all rice to one side of the pan, spray the empty side with spray oil. Crack two eggs in the pan, add salt and pepper to the eggs and scramble. Once the eggs are cooked, stir with rice to combine.
Add the shredded rotisserie chicken and soy sauce to the pan and stir.
Divide the fried rice evenly among the four glass meal prep containers.
Garnish with sliced green onion.
Allow to cool, then seal containers and refrigerate.
