Crispy Chicken Salad with Lime Olive Oil Dressing

Ingredients

For the Chicken:
Chicken breast (sliced thinly or pounded to even thickness)
1 egg (beaten)
Flour (for coating)
Salt, pepper, Italian spices (for seasoning)

For the Salad:
Arugula
Tomatoes (sliced or halved)
Green pepper (thinly sliced)
Corn kernels (steamed or canned)

For the Dressing:
Olive oil (2-3 tbsp)
Juice of 1 lime
Salt and pepper (to taste)

Instructions

Prepare the Chicken:
Season the chicken with salt, pepper, and Italian spices.
Coat each piece lightly in flour, then dip into the beaten egg, and back into the flour for a crispy coating.Heat a skillet with a little oil and cook the chicken until golden brown on both sides and cooked through. Remove and let it rest for a few minutes, then slice into strips.

Make the Dressing:
In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Adjust seasoning to taste.
Assemble the Salad:
In a large bowl, combine arugula, sliced tomatoes, green pepper, and corn kernels.
Drizzle the dressing over the salad and toss gently to coat.

Serve:
Plate the salad and top with crispy chicken strips.
Optionally, garnish with a little extra lime zest or freshly cracked pepper.
