Ingredients:
1 cup fresh peas
2 tablespoons strained yogurt
8-10 fresh mint leaves
1 tablespoon grated parmesan
¼ lemon juice
Whole wheat bread
Olive oil
Salt
Instructions:
Slice the bread into long, thin pieces.
Lightly dip each slice in olive oil and toast them in a pan until crispy.
In a mortar, combine the mint leaves and a pinch of salt. Crush them together.
Once the mint is well crushed, add the peas and continue to mash until blended.
Add the strained yogurt, grated parmesan cheese, and lemon juice. Mix everything well into a smooth spread.
Spread the mixture generously on the toasted bread slices.
Garnish with extra cheese, a drizzle of olive oil, and some fresh mint leaves.
