It had the perfect flavor combos, was ready in less than 30 minutes, and such a big serving size, making it perfect for those looking to feel satisfied while keeping their calories lower to lose weight. And this is perfect to prep ahead of time too since the cabbage won’t get soggy from the dressing!

INGREDIENTS
2 cups shredded cabbage
1.5 cups romaine
1 cup shredded chicken (see linked video for my batch prep hacks)
1/2 cup shredded carrots
1/2 cup shelled edamame
2 mandarin oranges
2 tbsp peanuts and/or crunchy edamame
1/2 a serving of my creamy peanut dressing
•Remnants of your peanut butter
•1.5 tbsp rice wine vinegar
•3 tbsp low sodium soy sauce or coconut aminos
•1/2 tbsp sesame oil
•2 tsp honey
•6 tbsp sugar free peanut butter powder
•Juice of 1/2 a lime
•1/2 tbsp mixed garlic
•Tsp minced ginger
•Sriracha to taste
•1-2 tbsp water (depending on desired consistency)
DIRECTIONS
•Cook your chicken (for my batch prep method see linked video)
•Wash an chop all your veg, shake and add dressing and mix together well
•Top with your crunchies and enjoy!
