Creamy Mushroom Soup | Easy Healthy Homemade Soup Recipe

Timings.
• Prep Time: 10 mins.
• Cooking Time: 20mins
• Total Time: 30 mins

Servings. 4 servings

Ingredients.
• ⅓ cup (75g/2 ½ oz) butter
• 2 medium onions, (roughly chopped)
• 2 garlic cloves, finely chopped
• 5 cups (500g/17 ½ oz) mushrooms (chestnut or button mushrooms, finely chopped)
• 2 tbsp plain flour
• 4 cups (1L/34 oz) hot chicken/vegetable stock
• ½ tsp dried thyme
• 1 bay leaf
• Salt and black pepper, to taste
• 5 tbsp (75ml/2 ½ oz) single cream (or heavy cream)
• Small handful of parsley or chives, roughly chopped

Method
1. Heat the butter in a large saucepan over medium heat.
2. Add the onions, and garlic and cook for 4-5 minutes.
3. Add the mushrooms and cook over high heat for 4-5 minutes, stirring occasionally, until softened.
4. Sprinkle in the flour and stir to coat the mushrooms evenly.
5. Gradually pour in the stock while stirring. Add the bay leaf and dried thyme.
6. Bring to a boil, lower the heat, and simmer gently for 20-25 minutes.
7. Remove and discard the bay leaf. Take the soup off the heat and blend with a hand blender until smooth.
8. Return the mushroom soup to the heat and stir in the cream. Heat gently until warmed through (do not boil). Alternatively, if freezing, add the cream when reheating later.
9. Serve hot, garnished with parsley or chives if desired.
