What you’ll need (make as much as you need):
5 Whole carrots
1 Bulb Fennel
2 Parsnips
-Peel the parsnips and carrots, and roughly chop all vegetables.
-Put on a sheet lined with foil, toss with 2 Tbs olive oil.
-Season with salt, pepper, thyme, rosemary, garlic powder and onion powder, or your preferred seasonings.
-Roast at 400 Degrees F for 30 minutes to an hour, it just depends on how tender you like the vegetables.
