Ingredients:
500 grams of curd (strained to make hung curd)
Half an onion (finely chopped)
Capsicum (finely chopped)
Carrot (finely chopped)
2-3 green chilies (finely chopped)
Fresh coriander leaves (finely chopped)
Boiled corn (for added texture)
Oil (for making the tadka)
Curry leaves (for tadka)
Mustard seeds (for tadka)
Bread slices (for making the sandwich)
Ketchup or dip of your choice (for serving)
Directions:
Start by taking 500 grams of curd and wrapping it in a muslin cloth to remove excess water. Hang the curd overnight to make hung curd.
Finely chop half an onion, capsicum, carrot, green chilies, and some coriander leaves.
Add the hung curd to the vegetable mix and stir to combine.
Add boiled corn to the mixture for an extra burst of flavor and texture.
In a small pan, heat oil and add curry leaves and mustard seeds to make the tadka.
Pour the hot tadka into the curd mixture and mix well.
Spread the curd mixture on a bread slice, then cover it with another slice of bread.
Toast the sandwich with very little oil in a pan until golden brown on both sides.
Serve your curd tadka sandwich with ketchup or your favorite dip and enjoy!
