🥕🍏INGREDIENTS for the BREAD 🥕
100 g quinoa flour
150 g oat flour
100 g whole grain rice flour
75 g tapioca starch
75 g potato starch
0ptional 30 g sesame seed
15 g sea salt
150 g activated sourdough (Read description BELOW) (https://youtu.be/FKZQPedukZg )
100 g mashed boiled potatoes
20 g finely grated raw apple
500 g lukewarm water
20 g psyllium husk ground
20 g chia seed
Optional: a hazelnut-sized piece of fresh yeast
For yeast-free bread, the dough requires extended rising time.
Bake in preheated oven (convection setting with steam – a bowl of water in the oven) at 220°C (428°F) for 45 minutes. Then take the lid off, lower the temperature to 190°C (374°F), and bake another 10-15 minutes until golden brown.
The bread is done when it sounds hollow when tapped.
👆👆👆Before baking ❗❗ACTIVATE❗❗ your sourdough STARTER like this:
Mix approximately:
50 sourdough STARTER ( https://youtu.be/FKZQPedukZg ) with
50 g of any gluten free WHOLE GRAIN flour (whole grain rice flour, oat flour, buckwheat flour, millet flour…. ),
50 g water and optional
1 tsp of maple syrup, agave syrup, coconut sugar, honey… (recommended in colder season).
Let sit in warm place 6 hours or longer until it’s activated (has increased in size and you see bubbles…).
