Winter is the season when fresh, green ,leafy vegetables like methi (Fenugreek)are abundant.This rice is perfect for your lunch box or dinner. I have also used fresh green peas. The spice(masala) powder can be made in larger quantity and used in other vegetable rice recipes or in subzis.
This serves 4 people.
Ingredients
1. Rice 1 cup(150 gms)/चावल-१ कप (१५० ग्राम)
2. Methi(Fenugreek) leaves-1cup/मेथी १ कप
3. Greenpeas-100 grams/उबले मटर १०० ग्राम
4. Water -2 cups/पानी 2 कप
5. Chopped onion- 1/प्याज -१
6. Grated coconut-2tbsp/खिसा हुआ नारियल-२ बड़े चम्मच
7. Turmeric powder-1/4tsp/हल्दी पाउडर-१/४ चम्मच
8. Lemon juice- 2 tsp/नींबू का रस-२ चम्मच
9. Oil – 5-6 teaspoons/तेल-५-६ चम्मच
10. Salt/नमक स्वादानुसार
11. Mustard seeds 1 tsp/राई-१ चम्मच
Ingredients for the masala powder
1. Chana dal.-1tsp/चना दाल-१ चम्मच
2.. Urad dal -1tsp/उरद दाल-१ चम्मच
3. Coriander seeds-2tsp/धनिया-२ चम्मच
4. Byadgi chillies 3-4/बेडगी मिरची ३-४
5. Curry leaves- 10 -12/कड़ी पत्ते १०-१२
