Spicy chipotle lunch wrap. The kind of meal that makes you pause mid-bite and think, “wait—this is healthy?”
This is how I eat: simple, spicy, and satisfying as hell.

For the chicken:
4 lb @GoodRanchers chicken breast cut into cubes
2-4 chipotle peppers in adobo sauce (adjust according to how spicy you like things)
3-4 garlic cloves
Salt to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1-2 tbsp lemon juice
3 tbsp oil
Low fat greek yogurt
BBQ yogurt dressing:
Low fat greek yogurt
BBQ sauce
For the wrap:
low fat mozzarella cheese
red onion
Lettuce / greens
Make the chicken marinade by adding the ingredients together and blend until smooth.
In a bowl, add the chicken and pour the marinade mixture over the chicken. Add oil and mix well.
Heat a skillet over medium-high heat. Add the chicken and cook until browned and cooked through.
To make the yogurt sauce, add greek yogurt and bbq sauce together, Mix well.
Assemble the wrap by adding the chicken, mozzarella cheese, yogurt sauce, red onion, and Lettuce in a tortilla.
Place the assembled wrap on a warm skillet over medium heat.
Cook until the tortilla is crispy and golden brown, and the cheese is melted and gooey. Serve hot and enjoy!
Note: You can adjust the level of heat in the recipe by using more or fewer chipotle peppers. Enjoy!
