Ingredients
1 onion, chopped
1 garlic clove
1 red bell pepper, chopped
7 cherry tomatoes
Salt (to taste)
Black pepper (to taste)
Oregano (to taste)
Olive oil
200g pasta (any type)
Mozzarella cheese (for serving)
2-3 tablespoons coconut cream
Instructions:
1. Roast the Vegetables – Preheat the oven to 200°C (400°F). Place the onion, garlic, red bell pepper, and cherry tomatoes on a baking tray. Drizzle with olive oil and season with salt, black pepper, and oregano. Roast for 20-25 minutes until soft and slightly charred.
