Here’s what we did to make these sopes healthier:
* Used plant-based proteins (beans and soyrizo)
* Added extra veggies to the soy chorizo
* Topped them with lots of veggies like tomato, lettuce, onion, and avocado
* Skipped deep-frying the sopes
