Recipe:
Halal Cart Chicken and Rice (Teen-Approved)
For the chicken:
2.5 pounds boneless, skinless chicken thighs
6–7 cloves garlic, minced
Juice of 1 lemon
1/4 cup avocado oil
1 tablespoon paprika
2 teaspoons dried oregano
1 tablespoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon turmeric
1 1/2 teaspoons salt
3/4 teaspoon black pepper
For the rice:
2 cups basmati rice
3 cups chicken broth (or water)
1/2 teaspoon turmeric
1 bay leaf
2 tablespoons butter
1/2 teaspoon salt
For the white sauce:
1/2 cup mayo
1/4 cup plain yogurt
2 tablespoons sour cream
1 tablespoon lemon juice
3 cloves garlic, minced or grated
1 tablespoon minced parsley
1–2 teaspoons sugar (to taste)
2–3 tablespoons water (to thin it out)
Salt and pepper to taste
To serve:
Chopped lettuce
Diced tomatoes
Diced cucumbers
Finely diced red onion
Optional: pita or flatbread
