This simple, healthy homemade bread recipe is completely no-knead, requires minimal effort, and results in the most flavorful, crusty loaf that stays fresh for days. Perfect for those who love traditional bread made from natural ingredients, without additives or preservatives.

This video will walk you through every step of making the perfect long-fermented wholemeal bread using type 00 flour, wholemeal flour, fresh yeast, olive oil, and apple cider vinegar. 🌿 INGREDIENTS

-600 grams of type 00 flour
-3 tablespoons of wholemeal flour
-400 milliliters of water
-20 dkg of fresh yeast (or about 20g)
-100 milliliters of olive oil
-3 tablespoons of apple cider vinegar
-1 teaspoon of powdered sugar
-2 teaspoons of salt

🍞 PREPARATION STEPS

In a mixing bowl, dissolve 20 grams of fresh yeast in 300 milliliters of warm water.
Add 1 teaspoon of powdered sugar and 3 tablespoons of apple cider vinegar to activate the yeast.
Mix in 3 tablespoons of wholemeal flour and stir well.
Gradually add the type 00 flour, sifting it lightly for better texture.
Add 2 teaspoons of salt and stir everything together.
Add more flour gradually and continue mixing.
Add 100 milliliters of olive oil and the remaining 100 milliliters of warm water.
Continue to mix until the dough comes together. It will be sticky and not completely smooth — that’s okay!
Let the dough rest in a bowl with a lid or covered with cloth to prevent drying out.
Every 20 minutes, stretch the dough slightly and let it rest again — repeat this process 3 times.
After the last stretch, cover and place the dough in the refrigerator to ferment for 48 hours.

🫖 AFTER 48 HOURS

Remove the dough from the fridge. It should be bubbly and soft.
Lightly flour your work surface with finely ground cornmeal or wholemeal flour.
Gently shape the dough without kneading.
Place it in a greased bowl or on baking paper, and let it rest covered for 1 hour.
Sprinkle with more flour and add water on top to help form a beautiful crust.
Score the top with a knife for decoration.
Bake in a cold oven (do not preheat) at 200°C / 392°F for 1 hour.

🍾 The result is an aromatic, golden, crusty loaf that’s beautifully soft inside. Perfect with butter, jams, or savory spreads! It lasts up to a week in the fridge — though in my house, it disappears within an hour!
