Hey guys! I hope you enjoy these Healthy dinner recipes to help maintain your current weight or to help you lose weight! These healthy meals can be made in your instant pot, crockpot or on the stove top and can be incorporated into any diet. They can definitely be modified to vegan or vegetarian as well.

Recipes:
Meal 1.
Chicken Soup/Caldo
Ingredients:
1-2lbs Chicken thighs or breasts
3-4 cups of water(maybe more depending on the size of your pot)
1/2 cup brown or white rice/chopped cilantro/chopped onion/mixed greens
1 cup baby carrots/chopped cabbage
2-4 Potatos/corn on the cobs/zucchini or other veggies of your choice
2 cloves of minced garlic or more 😉
1 tsp of garlic & onion powder/Salt/Pepper/cumin
Boil chicken for 30-45 mins, Add spices & veggies, cook until tender, not soggy.
Remember to taste whether you need to add more spices before serving.
Serve w/lime, corn tortilla & top w/ fresh cilantro or mixed greens
Meal 2.
Turkey Spaghetti
Ingredients:
1lb Ground turkey, 2 zucchini, Spaghetti sauce, mushrooms or other veggies of your choice
Cook & drain turkey, add mushrooms & sauce, simmer for 15 mins
Spiralize zucchini, squeeze w/heavy duty paper towel to remove excess water, cook with olive oil/Salt & Pepper for 5-8 mins
Serve w/ salad or a vegetable of your choice
Meal 3.
Cilantro Lime Chicken
Ingredients:
1-2lbs of chicken
1/2 cup chicken broth
Reserve 1/4 cup onion for instant pot
For Marinade:
3 TBSP lime juice
2 TBSP olive oil
1 tsp Chili Powder/Onion powder
1/2 tsp Garlic powder, Paprika, salt, pepper & cumin
1/2 cup chopped onion/chicken broth
Mix all ingredients for marinade in a food processor or small chopper, add chicken then marinate for at least an hour or longer.
Cook in instant pot for 30 mins or until tender or Cook in Crockpot on low for 4-6 hrs. (Don’t forget to add the rest of chopped onion & broth before cooking.)
Serve salad style w/romaine lettuce, salsa, low fat cheese, light sour cream or low fat plain Greek yogurt, cherry tomatoes, avocado, pinto beans & jalapeños. Or serve in corn tortillas w/ a side of quinoa, brown rice or Spanish rice, your choice of beans or vegetables.😉
