Ingredients:
For Phulkopir Singara:
Dough
• 1 cup Maida
• 1 tbsp Oil
• Salt To Taste
Filling
• 1 cup Potatoes
• 1 cup Cauliflower Florets
• 1 tsp Mustard Oil
• 1 tbsp Peanuts
• 1 tsp Salt
• 1/2 tsp Turmeric
• 1/2 tsp Red Chilli Powder
• 1 tsp Sugar
• 1/2 tsp Ginger Paste
• 2 Green Chillies
• 2 tbsp Raisins
For Koraishutir Kochuri:
Dough
• 1 cup Maida
• 1 tbsp Wheat Flour
• 2 tbsp Oil
• Salt To Taste
Filling:
• 1 cup Green Peas
• 1 Green Chilli
• 1/2 tsp Cumin Powder
• 1/2 tsp Turmeric
• 1/2 tsp Red Chilli Powder
• 1/2 tsp Sugar
• 1 tsp Bhaja Moshla
• 1 tsp Ginger Paste
• 1 tsp Oil
• Oil To Fry
Method Of Preparation
For Phulkopir Singara
1. Take a kadhai, pour in mustard oil, add a cup of chopped potatoes, peanuts and Saute it for a minute.
2. Add a cup of cauliflower florets and Mix it well.
3. Put some turmeric powder, red chilli powder, bhaja moshla, ginger paste and Stir it together.
4. Add salt to taste, cup of green peas and Mix it well together.
5. Add raisins, palm jaggery, water as required and Mix it well.
6. Put chopped green chillies, place a lid and Cook until it turns soft and the mixture gets dry.
7. In a big bowl, add a cup of maida, salt to taste, oil, water as required and Make a semi soft dough.
8. Take a piece of the dough, apply some oil to it and Flatten it with a rolling pin.
9. Slit it half from the middle, apply oil to it’s edges, roll/fold to make a samosa, add the filling, pinch to conceal the edges and leave them one by one in a pan/kadhai filled with hot oil.
10. Cook until golden brown in colour and then Provide it on a plate with any favorite chutney/sauce of your choice.
For Koraishutir Kochuri
1. Take a mixer jar, add a cup of green peas, chopped green chilli, ginger paste and Make a smooth paste.
2. In a pan, add some oil, green peas paste and Saute it for a minute.
3. Add turmeric powder, red chilli powder, bhaja moshla, jeera powder, salt to taste, sugar and Mix it well together.
4. Take a big bowl, add a cup of maida, wheat flour, salt to taste, oil, water as required and Make a semi soft dough.
5. Now pull out a good chunk of the dough, make a hole in the center, add the filling in it and then Seal it similar to the process of a Modak.
6. Apply maida and Flatten it with a rolling pin like a Puri and then leave it in a pan filled with hot oil for frying purpose.Â
7. Cook until lightly golden in colour and Serve it hot to family and friends.
