Ingredients:
• Trout
• Lemon
• Tomato
• Fresh herbs (dill, parsley, or tarragon)
• Olive oil
• Butter
• Salt
• Allspice
• Paprika
• Chili pepper
• Dried garlic
• Dried basil
• Celery root
• Milk
• Broccoli
• Baby carrots
Cooking process:
Celery Root Purée:
Boil the celery root in milk over low heat, adding salt and skimming off any foam. Blend until smooth, then stir in some butter.
Vegetable Side (Broccoli & Baby Carrots):
Season with spices and roast in a preheated oven at 200°C (392°F) until done.
Trout:
Debone the trout and prepare it in foil. Stuff with lemon slices, tomato, herbs, salt, and allspice. Drizzle with olive oil and add a few pieces of butter. Bake in a preheated oven at 200°C (392°F) for about 30 minutes.
