If you love tacos, then this bean and walnut taco has to be on your week night dinner list. The tacos are packed with nutrients like omega 3 and so much flavour that I guarantee you won’t just stop at two or three!
Recipe:
In a pan, toast 1 cup of walnuts till fragrant and finely chop them. Keep aside.
In a pan, heat some oil, add 1 large white onion, finely chopped and 3/4 of a red bell pepper and cook for 2 mins.
Add 2 tsp minced garlic cloves and finely chopped chilli/ jalapeño and cook for 2 more mins.
Add 1 1/4 cup cooked beans along with the walnuts and saute for a few mins.
Add 2 crushed tomatoes after blanching and peeling the tomatoes, a little water and cook for 5-6 mins.
Add the spices and salt
2 tsp cumin powder
1 tsp smoked paprika
1 tsp chilli powder
1 tsp coriander powder
2 tsp oregano
Add a little water if the spices burn and let them cook till the flavours come together and the tomatoes get darker – about 5-6 mins more.
Finally season with 1 tbsp of ketchup and fresh coriander!
Take tortillas of your choice and heat them on a pan with oil, fill one side with the taco filling and cheese and crisp it up on both sides.
To serve – open up the taco, add pickled onions, sour cream, salsa, jalapeños and serve with a curd, coriander and garlic dipping sauce 🥹
