Protein Pesto Toast 🌿🍞🥖
Ingredients:
1–2 slices whole grain or sourdough bread (toasted)
1/2 cup basil
4-5whole walnut
4-5 garlic cloves
1/2 cup grated cheese
1/2cup cottage cheese
Cherry tomatoes, sliced (optional)
Salt & pepper to taste
Chili flakes or hemp seeds (optional topping)
Instructions:
Toast the bread to your liking.
Blend in basil, walnut, garlic, cheese with some seasoning and olive oil.
Add cottage cheese to pesto paste and blend until smooth.
Spread a generous layer of pesto.
Top with cherry tomatoes, salt, oregano and any optional toppings.
