📝 Full Recipe:
🌾 Crispy Ragi Dosa Batter:
1 cup Ragi flour
½ cup Rava (semolina)
½ cup Rice flour
1 tsp Cumin seeds
½ tsp Crushed black pepper
1 tsp Chopped ginger
2–3 Green chillies (chopped)
1 tsp Chopped curry leaves
Salt to taste
4–5 cups Water (to make thin batter)
Chopped onions (for topping)
Ghee/oil (for cooking)
Method:
Mix all dry ingredients and aromatics in a bowl.
Gradually add water to make a smooth, runny batter. Rest for 10–15 minutes.
Heat a dosa tawa until hot. Sprinkle chopped onions on tawa.
Stir batter well and pour from a height to form a lacy mesh. Don’t spread.
Cook on high till set, then on medium with ghee/oil until crispy and golden brown.
Serve hot with chutney.
🌶️ Kara Chutney:
1 Onion (sliced)
1 Tomato (chopped)
4 Garlic cloves
4 Dry red chillies
2 tbsp Tamarind juice
1 tbsp Chana dal
1 tbsp Urad dal
Salt to taste
1 tbsp Cooking oil
½ tsp Mustard seeds
Curry leaves (for tempering)
Method:
Heat oil, sauté chana dal, urad dal, garlic, red chillies, onion, and tomato with salt until soft.
Let it cool, then blend to a smooth paste with tamarind juice.
Temper mustard seeds and curry leaves in hot oil. Pour over chutney and mix.
