Kids Lunch Box Zucchini Broccoli Cheela & Cabbage Coconut Curry
Zucchini Broccoli Cheela Recipe:
Soak the broccoli florets in hot water for 15mins mins.
In a chopper take 1 onion and 1 Zucchini and fine chop the and add them to a bowl.
Now in the same chopper add washed broccoli florets, ginger Garlic paste and green chillies and fine chop them.. add them to the zucchini mixture… Mine is a small chopper so I had to do it twice you can fine chop everything at once..
To this add fine chopped coriander leaves, 2tbsh ragi flour and 1tbsn besan… For spices I took salt,haldi, red chilli powder, coriander powder, kasuri methi, garam masala and pav bhaji masala… You can play around with spices of your choice… Mix them well and gradually add water until a thick paste is formed…
Now choice is yours you can make them as cutlets or add little more water and make them as cheelas as I did… On a tava spread the batter and cook from both the sides and it’s done…
Cabbage Coconut curry recipe:
Fine chop cabbage and wash them and steam them along with a handful of soaked moong dal until the cabbage turns semi soft.. or 3/4th cooked.
Now take half a coconut and grind it along with an inch ginger and Green chilles according to your spice quotient…
Now in a kadai add oil, urad dal, mustard seeds, jeera, dry red chillies, hing and curry leaves.. Now add the steamed cabbage mixture and mix well… Now add salt and the ground coconut mixture and mix well and let it cook until the raw smell of coconut disappears… Garnish it with coriander leaves and that’s it… It’s done…
