FULL RECIPE
Makes: 1 loaf (12 slices)
Ingredients:
Lentil Base:
==========
1 cup red lentils, rinsed and drained
1 cup water (for soaking lentils)
1 cup additional water (for blending)
1 tablespoon apple cider vinegar
¼ cup olive oil
2 large eggs
1 tablespoon maple syrup or honey
Dry Ingredients:
=============
1 cup almond flour
¾ cup tapioca flour
½ cup ground flaxseed
¼ cup psyllium husk powder
1 tablespoon baking powder (aluminum-free)
1 teaspoon baking soda
1 teaspoon sea salt
1 tablespoon fresh rosemary, finely chopped (optional)
1 teaspoon dried thyme (optional)
For the Top (Optional):
1 tablespoon mixed seeds (pumpkin, sunflower, sesame)
½ teaspoon flaky sea salt
Instructions:
============
Step 1: Prepare the Lentils
1. Place red lentils in a bowl and cover with 1 cup of water.
2. Let soak for at least 2 hours or overnight in the refrigerator.
3. Drain and rinse thoroughly.
Step 2: Preheat and Prepare
1. Preheat oven to 350°F (175°C).
2. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang for easy removal.
3. Lightly oil the parchment paper.
Step 3: Create Lentil Mixture
1. Place soaked lentils in a blender with 1 cup fresh water, apple cider vinegar, and olive oil.
2. Blend until completely smooth, about 1-2 minutes.
3. Add eggs and maple syrup, blend again until incorporated.
Step 4: Mix Dry Ingredients
1. In a large bowl, whisk together almond flour, tapioca flour, ground flaxseed, psyllium husk powder, baking powder, baking soda, salt, and herbs (if using).
2. Create a well in the center of the dry ingredients.
Step 5: Combine and Bake
1. Pour the lentil mixture into the well of the dry ingredients.
2. Gently fold together until well combined, being careful not to overmix.
3. The mixture will be thicker than regular bread batter.
4. Transfer batter to the prepared loaf pan and smooth the top with a spatula.
5. If using, sprinkle with mixed seeds and flaky salt.
6. Bake for 55-65 minutes until golden brown and a toothpick inserted in the center comes out clean.
7. If the top is browning too quickly, tent with foil for the last 15-20 minutes of baking.
Step 6: Cool and Store
1. Allow bread to cool in the pan for 10 minutes.
2. Use parchment paper to lift bread out of the pan and transfer to a wire rack.
3. Let cool completely before slicing (at least 2 hours).
4. For best results, let it rest overnight before slicing for cleaner cuts.
Storage:
========
– Store in an airtight container at room temperature for 2-3 days.
– Refrigerate for up to 1 week.
– Freeze sliced bread for up to 3 months. Thaw slices as needed.
Serving Suggestions:

– Toast and top with avocado and a sprinkle of hemp seeds.
– Serve alongside soup or stew.
– Use as a base for open-faced sandwiches.
– Toast and drizzle with olive oil and a pinch of sea salt.

Notes:

For a lighter texture, separate the eggs and whip the whites to soft peaks, then fold in after combining wet and dry ingredients.
If you can’t tolerate eggs, substitute with 2 tablespoons ground flaxseed mixed with 6 tablespoons water (let sit for 15 minutes before using).
For variety, add ¼ cup chopped walnuts, sunflower seeds, or dried herbs to the batter.
