Ingredients:
• 3 eggs 🥚
• 2 tbsp chopped onions
• 1 green chilli, chopped
• 1 small tomato, finely chopped
• Chopped coriander
• 1/4 tsp turmeric
• Salt to taste
• 4 bread slices
• 1/2 tsp chilli flakes
• 1/2 tsp Italian seasoning
• Oil or butter to fry
Method:
1. In a bowl, whisk eggs with onions, green chilli, tomato, coriander, turmeric, salt, chilli flakes, & Italian seasoning.
2. Heat oil or butter in a pan and pour in the egg mixture.
3. Cook until golden on both sides.
4. Place between toasted bread slices to make 2 sandwiches.
5. Serve hot and enjoy the spicy-herby goodness!
