MACROS AND CALORIES 6 servings per recipe (about 2 cups)

INGREDIENTS;
1 lb lean ground beef
1/2 white onion, finely chopped
1 can pinto beans, drained, rinsed
1 tbsp finely chopped fresh cilantro
1 Roma tomato, finely chopped
2 cups uncooked white rice, rinsed, drained
1 cup shredded cheddar
2 cups low-sodium beef or vegetable broth
1 packet taco seasoning
1 cup store-bought or homemade red salsa
3/4 tsp kosher salt, divided
4 garlic cloves, finely chopped
Sour cream, hot sauce, and warm flour tortillas, for optional serving
INSTRUCTIONS;
In a large pan on medium heat, spray some oil in the pan, add garlic, ground beef, and half a packet of taco seasoning. Cook your ground beef through, making sure to drain the excess oil.
In a separate oven-safe dish or Dutch oven, add rice, beef stock, onions, tomatoes, beans, corn, cilantro, and the rest of the taco seasoning. mix and combine.
Top with your beef mixture and salsa of choice, spread evenly, and top with shredded cheese.
Bake uncovered on 375 for 45 minutes and enjoy to your liking; either bowl style on a bed of lettuce, on a tortilla, or as is with your favorite toppings!
