Fall Chopped Harvest Salad

This salad has all the flavors I am totally obsessed with! It’s sweet and savory, and oh so crunchy. My go to when I’m craving a hearty healthy salad this time of year!

Ingredients:
3 cups romaine (chopped)
3 cups kale (chopped)
1 red apple (diced)
1 cup roasted pecans (chopped)
1 cup green onion (chopped)
1 cup grated parmesan
1 can chickpeas

Honey mustard vinaigrette
1/3 cup olive oil
1/3 cup yellow mustard
1/4 cup honey
2 tbsp apple cider vinegar
1/4 tsp salt

Instructions
Drain and rinse can of chickpeas and pat dry. Season chickpeas with olive oil, salt and pepper and air fry at 390° for 13 minutes. In a large bowl add the romaine, kale and all other salad ingredients. Make the dressing and keep it on the side if you plan to meal prep. Makes 5-6 servings.
