I make a different variations of this breakfast all the time. The main ingredients of course are eggs and avocados. It doesn’t get healthier or tastier, best way to start any day. Are you interested in other versions too?

Ingredients:
6 Large eggs
2 large avocados
3 tbsp jalapeño cream cheese @phillycreamchs
1 spring onion sliced thin
1/4 cup finely diced red onion
Salt and pepper to taste
1 tbsp chopped fresh dill
1 tbsp chopped fresh mint
For the dressing:
1/2 tsp red pepper flakes
The juice of 1/2 large lime
1 tbsp extra virgin olive oil
Lettuce to serve
Bread to serve
Dill for garnish
Preparation:
You will need 6 hard boiled eggs and 2 avocados. Place in a bowl. Add 3 tbsp of cream cheese @phillycreamchs. Chop your herbs and onions. Add on top. Prepare the dressing; mix lime, olive oil, salt, black pepper and red pepper flakes.
Use a potato masher to mix everything together. Serve on top of lettuce or bread or both.
