Tiffin Box Treat – Mini Jowar Muffins
(I give 2 muffins in my daughter’s snack box)
If you live in abroad, then September is the month when children start their school. My little one also started her school in September and she has to bring two different boxes to her school, snack box and lunchbox. Initially, I gave her some fruit and some seeds as we can’t give nuts, it’s PROHIBITED. However, she got bored so I thought to bake something healthy for her that she can finish in her school and stay energized. So here are Jowar muffins & I involved her in the preparation so that she knows what is going in.
Ingredients
1/2 cup Desi Ghee ~ 100 gm
75 gm Coconut Sugar ~ 1/3 cup + 1 tbsp
(Alternative is jaggery powder/Brown Sugar)
120 gm Full fat curd ~ 120 gm
1 tsp vanilla essence
1/2 Cup + 1.5 Tbsp Jowar Flour ~ 80 gm
1/3 cup whole wheat flour ~ 40 gm
12 gm unsweetened cocoa powder
1/2 cup room temp milk
Method :
1. In a mixing bowl, add ghee + coconut sugar. Mix them well until the colour gets light and then add vanilla essence, give it a good mix.
2. Now sift in the dry ingredients, Jowar flour, whole wheat, flour, unsweetened cocoa powder, baking soda & baking powder.
3. Now, add room temperature milk, mix dry and wet ingredients very well. If you think the mixture is a little bit on dryer side, add 1 to 2 tablespoon of milk and make a thick runny batter.
**Turn on the oven at 180 C or 355F for preheating
4. Now put the mini muffin liners in a cupcake baking tray and pour the batter in it. You can make either 20 mini muffins with this batter or you can make 12 mini muffins and 4 cupcakes like the way I did.
5. Bake at 180C~ 355F for 20-25 min in pre-heated oven.
6. Let them cool down & then you can enjoy these muffins guilt free. Store it in an air tight container for 6-8 days.
