Chicken:
2lbs chicken thighs
1/4C olive oil
2tbsp honey (omit whole30)
2tbsp lemon juice
1 1/2 tsp oregano
1 1/2 tsp basil
1tsp salt
1tsp garlic powder
1. heat cast iron skillet over medium & cook chicken 5 min on each side ( or until 165 degrees)
Salad:
10oz baby tomatoes, quartered
1 red onion, diced
1 cucumber, peeled & diced
15oz can black olives, drained
5oz feta (omit whole30)
1/8c olive oil
1/8C balsamic vinegar
1tbsp water
1tsp oregano
1tsp basil
*mix ingredients & toss in dressing
Assembly:
layer chicken & salad over shredded romaine lettuce and rice (or cauliflower rice for whole30).
Drizzle w/ Tzatziki Sauce of your choice or use my recipe in the meal plan!
