INGREDIENTS :
2 cups shredded green papaya (firm, unripe)
1 small carrot, shredded (optional, for color)
half a capsicum, shredded
2–3 fresh red or green chilies (adjust spice level)
2 garlic cloves
3 tbsp roasted peanuts (lightly crushed)
Fresh coriander leaves for garnish
2 tbsp lime juice (freshly squeezed)
salt to taste

METHOD:
Peel the green papaya, carrot, and capsicum and shred them into thin strips. Thinly slice the tomato and keep it aside.
In a mortar and pestle, pound roasted peanuts, chilies, and garlic lightly, or pulse once in a mixer to get a coarse paste.
Toss in shredded papaya, capsicum, tomato, and carrot. Add the coarsely ground peanut mixture and chopped coriander leaves. Mix everything well so the dressing coats evenly.
Top with roasted peanuts and garnish with coriander (optional).
Serve immediately for the best crunch, alongside rice, grilled chicken, or as a fresh side dish
