🥗 Ingredients

1 bitter gourd (karela), deseeded and sliced
1 medium onion, thinly sliced
1 small cucumber, chopped
1 tomato, chopped
1 green chili, finely chopped
A few coriander leaves, chopped
Salt and pepper, to taste
½ lemon, juiced
1 tbsp brown sugar or jaggery
½ cup grated coconut (fresh or thawed frozen)
Roasted peanuts (for garnish)

👩‍🍳 Method

1. Cut bitter gourd, remove seeds, slice, and transfer to a bowl.
2. Add salt and enough water to cover; rest for 15 minutes.
3. Meanwhile, chop the onion, cucumber, tomato, chili, and coriander.
4. Drain the bitter gourd, rinse with fresh water, and squeeze to remove excess bitterness.
5. Transfer bitter gourd to a serving bowl, add chopped veggies.
6. Season with salt and pepper. Squeeze lemon juice.
7. Add grated coconut and brown sugar/jaggery to balance the bitterness.
8. Mix everything by hand for best flavor.
9. Garnish with roasted peanuts or nuts of your choice.
10. Serve fresh or chilled as a healthy snack or side dish.
