• Dressing:
• 3 tbsp olive oil
• 3 tbsp tahini (ground sesame paste)
• 1 lemon, juiced
• 1 tbsp honey
• 2 tbsp water (to thin)
• ½ tsp cayenne powder
• Salt & pepper, to taste
• Salad Layers:
• 2 cups cucumber, sliced
• 2 cups purple cabbage, shredded
• 1 cup garbanzo beans, rinsed
• 1 cups cherry tomatoes
• 1 cup kimchi
• 2 handfuls arugula
• 2 tbsp pumpkin seeds
👩🍳 Instructions
1️⃣ In a large 2L jar, whisk together olive oil, tahini, lemon juice, honey, cayenne, salt, and pepper. Thin with water until creamy.
2️⃣ Layer in order: cucumber → cabbage → chickpeas → cherry tomatoes → kimchi → arugula.
3️⃣ Sprinkle pumpkin seeds on top.
4️⃣ Store sealed in the fridge. Shake before serving or scoop into bowls.
