🌶 Capsicum Rice Recipe
📝 Ingredients
Cooked rice – 2 cups (preferably cooled, leftover rice works best)
Capsicum (bell peppers) – 2 medium (green/red/yellow, thinly sliced)
Onion – 1 medium (finely sliced)
Green chilies – 2 (slit)
Curry leaves – 8 to 10
Ginger-garlic paste – 1 tsp
Oil / Ghee – 2 tbsp
Mustard seeds – ½ tsp
Cumin seeds (jeera) – ½ tsp
Dry red chili – 1 (optional)
Chana dal – 1 tsp
Urad dal – 1 tsp
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp (adjust to taste)
Garam masala / Sambar powder – ½ tsp (optional, for extra flavor)
Salt – as required
Coriander leaves – 2 tbsp (finely chopped, for garnish)
Lemon juice – 1 tsp (optional, for freshness)
👩🍳 Method
Cook Rice – Prepare rice and keep it aside to cool. Grains should be separate, not mushy.
Heat Oil/Ghee – Add mustard seeds, cumin seeds, chana dal, urad dal, dry red chili, and curry leaves. Let them splutter.
Add Aromatics – Add onion, green chilies, and sauté until onions turn golden. Then add ginger-garlic paste and sauté until raw smell disappears.
Add Capsicum – Toss in the sliced capsicum and sauté for 3–4 minutes (don’t overcook; it should stay slightly crunchy).
Add Spices – Mix in turmeric, red chili powder, garam masala/sambar powder, and salt. Stir well.
Mix Rice – Add cooked rice and gently combine with the masala until evenly coated.
Finish – Garnish with coriander leaves and a splash of lemon juice.
