Apple Pecan Chicken Salad
Yield: 1–2 servings | Prep Time: 10 min
Ingredients
• 6 oz shredded chicken breast
• ¼ red onion, diced
• 1 green onion, diced
• ¼ avocado, diced
• ½ small apple, diced
• 1 Tbsp chopped pecans
• 2 Tbsp reduced-sugar dried cranberries
• ¼ cup plain nonfat Greek yogurt (or DF yogurt alternative)
• ½ Tbsp Dijon mustard
• 1 tsp lemon juice
• 1 tsp apple cider vinegar
• ½ tsp dried dill
• Salt & pepper, to taste
