CRISPY PARM CRUSTED ARTICHOKES

You only need two ingredients : quartered canned artichoke hearts and Parmesan cheese 🙂 They are crispy, crunchy, cheesy and loaded with fiber!
Instructions:
Drain two cans of quartered artichokes and pat them dry. Place artichokes on parchment lined baking sheet and roast at 400° for 15 minutes then set them aside. Using the same baking sheet add a thin layer of Parmesan cheese and then add the artichokes back on. Sprinkle with salt and pepper and pop back into the oven for 12-15 more minutes.
I like to serve with lemon aioli which is mayo, 1 pressed garlic clove, lemon juice, lemon zest and salt and pepper to taste 🙌
