No Onion No Garlic – Mexican Rice Bowl

NAVRATRI is coming & when you will find thousands of recipes for fasting but what about those who don’t fast & want to enjoy food without onion garlic. No Problem, I got you covered. Today, I am sharing NO ONION NO GARLIC MEXICAN LUNCH BOWL, which is high in protein & an amazing Weightloss meal. You can absolutely enjoy it in Lunch. Just a handful of veggies, beans & rice, you are done.

Serves : 3
Ingredients
2 tsp oil
Finely chopped ginger & green chilli
Finely chopped carrots (I missed to add, please add them 100 gm)
100 gm finely chopped mix bell peppers
100 gm broccoli florets
30 gm sweet corns
Spices : salt, red chilli powder, cumin powder , oregano and red chilli flakes
300 gm boiled kidney beans
300 gm boiled rice
2 tbsp pasta sauce (mine is homemade)
3-4 basil leaves
Lime juice

Method :
1. In a pan, add oil, let it get hot. Add ginger and green chilli. Now, add veggies and spices. Mix well, cover and cook for 6-8 min.
2. Now add boiled beans and rice, basil and lemon juice. Mix everything well and cook for 5-7 min. Lunch meal is ready.
I am pairing it with toasted paneer which I always keep in my fridge as meal prep & some salad & guac.
